Repost - Recipe Red Beans and Avocado Quesadilla


I think this was good, but I haven't made it since I wrote this post back in July 2006...

Red Bean Quesadillas

Okay, so I caved the other night and made dinner after proclaiming I would only eat ice cream from dinner. This is what I made:

1 can of red kidney beans, drained and rinsed

1 avocado cut into tiny pieces while still in skin (for easy mashing) then scooped out with spoon

3 med tomatoes, diced

1 tbs buffalo wing sauce or Louisiana Hot Sauce

1/2 package of Mexican cheese blend

6 whole wheat tortillas from Trader Joe’s

Heat over to 425

Mix all ingredients together in big bowl until avacado coats all other ingredients. Place quesidilla on cookie sheet. Scoop 1/6 of mixture onto half quesadilla then fold over to make half moon shape. Repeat five times. You’ll probably need two cookie sheets, unless you have some magic way of fitting 6 quesdillas nicely onto a cookie sheet.

Bake until top of quesidilla is brown. Serve with sour cream, chopped lettuce, tomato and onion and/ or salsa, or just plain.

Another recipe, while it's in my head because I made it today.

BAKED PENNE RECIPE

Heat oven to 425 degrees

Ingredients

1 package of al dente cooked penne

1 large tomato, thinly sliced in then quartered

1/2 cup of tomato juice

1 tbs olive oil

1 tbs basil flakes (from Trader Joes)

1 tsp minced garlic

salt and pepper

1/2 cup mozzarella, with a small handful set aside

1/2 shredded pecorano romano, with a small handful set aside

1/2 cup of that super processed parmesan cheese from the green can, with a small handful set aside

In a large, deep caserole dish, combine all the ingredients except the set aside cheese. Once all the ingredients are well combined, top with the set aside cheese. Cover dish and bake for 30 minutes. Uncover and bake for anotehr 15 minutes. Serve.

It's wicked good.
